Vibe Cafe: The Best Breakfast in Liverpool
Described as “A food experience for the mind, body and soul”, The Vibe Cafe in Liverpool is the highest-rated vegan restaurant in Liverpool on Happy Cow! Vibe is a family-run business with a dream to share their food, with the city they love. The Vibe team prides themselves on their offer of a vegan fried or poached ‘egg’ while keeping a wholefoods feel about the whole menu. Situated within walking distance from the waterfront it’s easy to see why Vibe has the reputation that it has not only in the vegan community but its also #9 of 1,277 Restaurants in Liverpool according to TripAdvisor! This is my favourite place to eat in Liverpool and it’s easy to see why!
Vibes menu is a thing of beauty! Serving breakfast until 4 pm they offer up a hash stack, complete with a vegan fried egg, gluten-free pancakes, avocado smash with salsa and their house beans on sourdough toast. That is not all because Vibe also serves their version of an eggs royal, homemade vegan poached eggs on a bed of spinach, a smoked carrot ‘salmon’ atop an English muffin and topped with hollandaise sauce. As well as their eggs benedict which replaces the smoked carrot ‘salmon’ with pulled jackfruit. Vibe also offers a range of toasties including homemade carrot ‘salmon’ bagel, coronation Cauliflower wrap and a chickpea ‘tuna’ melt. They also serve lunch all day, serving up a double smash cheeseburger, grilled oyster mushroom gyros and lentil and walnut Bolognese among other dishes.
However, with all this said the one thing that keeps bringing me back is the big one! The big one is Vibes full English breakfast and that is part of what we ordered on this visit. Two delicious vegan sausages paired perfectly with silken tofu scrambled egg. With a side of skin on hash bites, the meal is accompanied by house baked beans, peppered savoy cabbage, mushrooms, roasted tomato and sourdough toast. I have been to Vibe three times so far and each time I have gotten the big one. I just can’t resist it. The whole breakfast comes together perfectly. This was the first breakfast that I had ever had savoy cabbage on and it’s definitely something I’m going to try for myself! Similarly, this was the first time I had eaten homemade baked beans and it is far superior to the tinned stuff. Also, I think we can all agree on this but sourdough toast is the top-tier of all toasts.
On this visit, we also ordered the Breakie Bagel! Grilled vegan sausages stacked on a toasted, seeded bagel with salad, ketchup and topped with a homemade vegan fried egg! This is the newest addition to the Vibe menu and it is just as good as everything else you can try. The whole bagel is the perfect breakfast bite, between the taste of the sausage, the egg and the ketchup you completely forget that everything you are eating is vegan. If you’re going to go to Vibe for any reason, make it to try their vegan eggs. They are an absolute game changer. The first time we visited Vibe was to try the vegan eggs but we keep coming back to try everything on the menu!! Any opportunity I get to visit Liverpool I make sure that I make a stop in Vibe Cafe and you will not regret it if you do too.
